Stuffed Mushrooms Hors D'oeuvres

This is a very easy dish to make and is always a party favorite.

Ingredients:

• Cremini mushrooms 20
• Extra virgin olive oil about ½ cup
• Kosher salt to taste
• Black pepper to taste
• Fresh spinach ½ #
• Parmesan cheese ½ cup
• Goat cheese ½ #

1. Remove stem from mushrooms and place them in a mixing bowl. Lightly coat with oil and season with Salt and Pepper
2. Lay mushrooms cap side down on a sheet pan and bake in a 375 degree oven until they are tender (about 10 minutes)
3. Flip mushroom to drain them and flip back so cap side is down again. Set aside to cool
4. To make stuffing, saut? spinach in a little olive oil until it is just wilted. Remove from pan and place in a bowl with cold water. Squeeze dry and chop into small pieces.
5. In a bowl mix together the spinach and goat cheese with the parmesan. Season with salt and pepper to taste.
6. Fill mushroom caps with cheese and spinach mixture and place in a 400 degree broiler. Broil for about 10-15 minutes until the tops turn golden brown.
7. Serve hot.
