  • Dried chick peas 1 ¼ #
  • Lemon juice 1 cup
  • Salt 4T
  • Garlic 10 cloves
  • Olive oil 2 ½ T
  • Sesame paste 2 ½ cups
  • Cumin 2 T
  • Water 2 ½ cups


  1. Soak chick peas over night
  2. Cook in boiling water until the peas are tender
  3. Cool peas in cold water
  4. Process peas, garlic, salt, oil and lemon juice in food processor until it is very smooth
  5. Add lemon juice, sesame paste and water in stages and keep processing till all the liquid is added
  6. Adjust consistency as needed and refrigerate
