  • Eggs 4 each
  • Whole Milk 6 oz
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste (optional)
  • AP Flour 12oz
  • Butter as needed for sautéing


  1. Combine eggs, milk and seasoning in a large bowl, mix well.
  2. Work in the flour by hand
  3. Let the dough rest for 10 minutes
  4. Using a Spaetzles machine or other shaping technique, drop Spaetzles into salted, boiling water and cook until they float (about one minute)
  5. Remove from water and transfer to a bowl with ice water
  6. Sauté in butter and season to taste. (optional)
  7. Can be stored in fridge for later use
